SHEET PAN APPLE PANCAKE

Ingredients
- PREP 15 minutes
- BAKE 25 minutes at 400°F
- STAND 10 minutes
- Nonstick cooking spray
- 1½ cups all-purpose flour
- 1½ cups whole wheat flour
- 1 Tbsp. baking powder
- 2¼ tsp. ground cinnamon
- ½ tsp. salt
- 1½ cups milk
- 4 large eggs
- ¼ cup plus 1 Tbsp. butter melted
- ¼ cup pure maple syrup
- 1 Tbsp. vanilla
- 4 medium apples such as Braeburn, Granny Smith, or Pazazz
- 2 Tbsp. sugar
Instructions
- 1. Preheat oven to 400°F. Coat a 15×10-inch baking pan with cooking spray. Line bottom of pan with parchment paper.
- 2. In a medium bowl whisk together flours, baking powder, 2 tsp. of the cinnamon, and the salt.
- 3. In a large bowl whisk together milk, eggs, ¼ cup of the melted butter, the maple syrup, and vanilla. Core and coarsely shred two of the apples (measure 2 cups shredded apples). Stir shredded apples into milk mixture.
- 4. Stir flour mixture into milk mixture just until combined. Pour batter into prepared baking pan, spreading evenly.
- 5. Core and thinly slice the remaining two apples and arrange slices on top of batter. Lightly brush apple slices with the 1 Tbsp. melted butter. In a small bowl stir together sugar and the remaining ¼ tsp. cinnamon. Sprinkle over apples.
- 6. Bake about 25 minutes or until edges are golden brown and a toothpick comes out clean. Let stand 10 minutes before serving. Cut into 12 squares and drizzle with additional maple syrup. Makes 12 servings (1 piece each).
