- 6 large eggs
- ¼ cup milk
- Black pepper to taste
- Salt to taste
- 2 tablespoons unsalted butter
- 1 cup fresh herbs parsley, cilantro, dill, and green onions, chopped
- ½ cup feta cheese crumbled
In a suitable bowl, whisk the eggs, milk, black pepper and salt.
In a suitable nonstick frying pan, melt the butter over medium heat.
Stir in the chopped herbs to the pan and cook until fragrant, about 1-2 minutes.
Pour the prepared egg mixture into the pan and cook, stirring occasionally, until the eggs are set but still slightly runny, about 5-7 minutes.
Sprinkle the feta cheese on the top of the eggs and cook for almost an additional minute until the cheese is melted.
Serve the herb-y egg delight hot, garnished with additional fresh herbs if desired.
